As you walk into this chocolate shop in La Clayette there is the most wonderful aroma – this is any chocoholic’s dream – l’odeur était enivrante!

There are artisans making fine chocolate in most Burgundian towns but several stand out as being extra special. Bernard Dufoux is one such chef who has been refining his art for over 40 years in the little town of La Clayette in the Brionnais. The walls of his shop are covered with certificates of merit and for four years running he was voted best chocolate maker in France.

Truffles are one of Monsieur Dufoux’s specialities. Taking the finest cocoa beans from South America, he makes a ganache – a chocolate cream filling made from the best crème fraîche in this dairy-rich region. Praline with dried fruits and chocolate make a dessert that is another classic. New additions to the range are added all the time as he and his team work on ideas in the laboratory.

Chef Dufoux, who is gregarious and keen to pass on his expertise, runs courses for budding chefs or just plain chocoholics on the first Wednesday afternoon of each month for four hours. Students learn how to make a variety of his specialities, and then take home the results of their work at the end.

And what makes a good chocolate? ‘It must be smooth and consistent with a velvety texture, a strong flavour without it being too dominant, with a harmony of bitter, sweet and parfums such as orange or rum.’ he says. Once you have tasted one of his creations, watch out, there will be no turning back, you will be hooked for sure!
