Run by Michelin one star chef William Frachot, the food is, as you would expect, excellent, presented in contemporary surroundings. Below the hotel, there are the 13thC wine cellars with its vaulted ceiling, an impressive venue for receptions.

The hotel has an atmospheric bar, but if nightlife is your choice, explore what is on offer in Dijon itself. This is a university town so there is plenty going on. Shopping is good too: chic and understated. Or head to the market where the stalls spill out around this lovely old building, and see what seasonal fare is on offer. The Museum of Beaux Arts in the Palace of the Dukes of Burgundy and the Archaeology museum housed in the spectacular abbey of St Bénigne, both entry free-of-charge, should not be missed.
